Ingredients

Directions

  1. Pit the dates; if they are firm, soak them in warm water for 10 minutes and drain.
  2. Pulse the almonds, walnuts, pecans, hazelnuts and pumpkin seeds in a food processor until coarsely ground.
  3. Add the dates and 2 tablespoons of coconut oil and process until the mixture clumps together when pinched, adding more oil a spoonful at a time if it is too dry.
  4. Mix in cocoa powder and ground coffee to taste, pulsing briefly to blend.
  5. Roll the mixture into small balls about 1 inch across.
  6. Roll each ball in shredded coconut to coat.
  7. Chill for at least 30 minutes to firm up, and keep refrigerated in a covered container.
