Blue Collar Bolognese
From Cave Girl Eats. 1 hr. 9 ingredients
Ingredients
- 2 Tbs. bacon fat OR several pieces of bacon, chopped
- 2-3 medium carrots, chopped [shredded]
- 1 medium onion, chopped
- 2 celery stalks, chopped
- minced garlic, if desired [2 cloves]
- 1 lb pasteured (grass-fed) ground beef [ground turkey]
- 1 can organic tomato paste
- 2-3 chopped tomatoes [2 cans diced tomatoes plus 1/2 can water]
- Spices (like Oregano & Basil) [Italian spice mix, chili powder, fennel]
Directions
- Warm the bacon fat in a large heavy pot over medium heat, or cook the chopped bacon until it renders its fat and starts to crisp.
- Add the carrots, onion and celery and cook, stirring, until softened and starting to colour, 8 to 10 minutes; stir in the garlic for the last minute.
- Add the ground beef (or turkey), raise the heat to medium-high, and cook, breaking it up with a spoon, until no pink remains, about 8 minutes.
- Stir in the tomato paste and cook for 2 minutes so it darkens slightly and coats the meat.
- Add the tomatoes (and the half can of water if using canned) along with the oregano, basil or other spices and a good pinch of salt.
- Bring to a simmer, then lower the heat and cook gently, partly covered and stirring occasionally, for 30 to 45 minutes, until thick and rich.
- Taste, adjust the salt and seasoning, and serve over pasta, zucchini noodles or spaghetti squash.
